Curcumin
Turmeric is the dry rhizome of the ginger plant Curcuma longa L., which is irregular oval, cylindrical or spindle-shaped, often curved, and some have short forked branches, 2-5cm long and 1-3cm in diameter. The surface is dark yellow, rough, with shrunken texture and obvious links, and there are round branch marks and fibrous root marks. The quality is firm, not easy to break, the section is brownish yellow to golden yellow, horny-like, with waxy luster, the inner cortex has obvious rings, and the vascular bundles are scattered in dots. The aroma is specific, bitter and acrid.
